What are Proterra Plant-Based Crumbles made from?
Our chef-crafted, seasoned crumbles are made from pea proteins. These proteins are texturized using minimal ingredients to create a product that mimics the texture and appearance of animal protein.

What’s the shelf life of dry crumbles?
You can store the sealed product non-refrigerated for up to one year. This allows you to better manage inventory and supply.

What happens if I hydrate Proterra Plant-Based Crumbles for longer than the recommended 2 minutes?
Product will not change in quality if hydrated longer than 2 minutes.

What happens if I hydrate Proterra Plant-Based Crumbles for less than the recommended 2 minutes?
To ensure product will cook up with desired meaty texture, add 5 minutes of additional cooking time.

Can I use other cooking methods, such as deep frying, grilling or an impinger oven?
Our recommended method is virtually foolproof but you may find other methods work for you as well. Make sure to hydrate Proterra Plant-Based Crumbles according to product instructions and then feel free to experiment.

Is there cook loss with Proterra Plant-Based Crumbles?
Once hydrated, 0.3%–5% water may be lost during oven cooking, especially if uncovered.

What about holding times?
Proterra Plant-Based Crumbles have excellent holding times: up to 2 hours uncovered for steam table/buffet line or covered in a holding oven. Stir occasionally.

How should I store and reheat the product?
Refrigerate up to 4 days or freeze for up to one week. Slack overnight in refrigerator, if frozen, and reheat refrigerated product following the time and temperature recommendations referenced on the package.

Do you have organic options?
Organic options for Proterra Plant-Based Crumbles are not available at this time.
