1 package Proterra Savory Barbacoa-Inspired Plant-Based Crumbles
10 cups water
½ cup vegetable oil
1 quart salsa
2 quarts eggs, beaten
Green onions
Avocado slices
Tortillas

Preparation

1) Prepare and cook plant-based barbacoa according to instructions
2) While barbacoa is in the oven, make scrambled eggs (can be substituted with vegan eggs)
3) To assemble, place 1 cup scrambled eggs on tortilla
4) Add 1 cup plant-based barbacoa crumbles
5) Layer avocado slices on top
6) Sprinkle with sliced green onions and 2 tablespoons salsa
7) Wrap in tortilla
8) Serve with more salsa on the side
