Plant-Based Barbacoa Papusas

Ingredients
3 lb. masa harina
¼ cup salt
7 ½ cups water
For the filling:
1 package Proterra Savory Barbacoa-Inspired Plant-Based Crumbles
10 cups water
½ cup vegetable oil
Preparation
For the filling:
Prepare and cook plant-based barbacoa according to instructions
Let cool
For the masa dough:
In a large bowl, mix masa harina and salt
Add water gradually, mixing with your hands
Knead into a dough and cover
To assemble:
Divide masa dough into 2-ounce balls
Flatten in your hand to around 3-inch diameter disc
Fill with 2 tablespoons filling and close the dough's edges by forming in the center
Flatten with your hand to form a disc
Heat a large non-stick sauté pan or a griddle over medium heat
Lightly grease with oil and cook papusas until you see light brown spots, around 4 minutes each side
