Plant-Based Chimichurri Cacciatore

Ingredients

1 package Zesty Chimichurri Plant-Based Crumbles
10 cups water
½ cup vegetable oil
2 cups olive oil
1 lb. yellow onions, large dice
2 lb. carrots, large slices
Red bell pepper, large dice
1 cup garlic, sliced
2 #10 can diced tomatoes
1 #10 can crushed tomatoes
¼ cup rosemary
¼ cup parsley

Preparation

1) Prepare and cook plant-based chimichurri according to instructions
2) While plant-based chimichurri is cooking, sauté onions and carrots in a separate large pan until onions are translucent
3) Add bell peppers and garlic, sauté for 3 minutes
4) Add in diced tomatoes, crushed tomatoes and herbs and simmer on low
5) Mix cooked cacciatore sauce with plant-based chimichurri
6) Serve as-is or with cooked pasta
