Plant-Based Chimichurri Pasta Primavera

Ingredients

1 package Zesty Chimichurri Plant-Based Crumbles
10 cups water
½ cup vegetable oil
10 lb. bowtie or penne pasta, cooked
3 lb. zucchini, sliced
3 lb. yellow squash, sliced
1 lb. yellow onions, julienned
2 lb. red bell pepper, julienned
1 lb. peas, frozen
1 cup parsley, chopped
1 cup basil, chopped
1 cup extra virgin olive oil, to drizzle
2 cups parmesan, shredded
Salt and pepper to taste

Preparation

1) Prepare and cook plant-based chimichurri according to instructions
2) While plant-based chimichurri is cooking, sauté onions in a separate large pan until translucent
3) Add in zucchini, yellow squash, bell pepper and peas. Sauté until cooked.
4) Season with salt and pepper
5) Mix with plant-based chimichurri, cooked pasta, extra virgin olive oil, fresh herbs and parmesan cheese
